Stuffed Shells & Strawberry Cheesecake: A Winning Combination

If you are looking for a way to keep your relationship burning longer, there is no better way than through a man’s stomach. Making your man a home cooked meal after he has been working very hard all day can make for a world of difference. It can also make for one happy man. Most men like the hearty type meals and are not looking forward to a soup and a salad type of meal. After working all day, they need something that is going to satisfy them enough to possibly give you the message that you have been waiting for all day. When preparing for a home cooked meal, think about the three main courses to dinner. Starter which could be as simple as a salad or as complex as a bruschetta, a main course which could be spinach stuffed shells, and a dessert being a strawberry cheesecake. Less is more to a man, so going too extravagant can come off as you trying too hard. Less is definitely more. Here are the recipes for spinach stuffed shells and the strawberry cheesecake.

Spinach Stuffed Shells

1 box of jumbo shells

2 containers of Ricotta cheese (15 oz.)

2 eggs

1 medium box of frozen spinach, drained

2 cups mozzarella cheese

1 2lb jar of your favorite spaghetti sauce

 

Preheat your oven to 350 degrees.

In a medium size bowl mix the Ricotta cheese, the 2 eggs and 1 cup of cheese. Cook the frozen spinach by following the directions on the box. Drain the spinach. Add the cooked spinach to the cheese mixture.

Boil water on the stove. Cook the jumbo shells to al dente. Drain the water. Splash the shells with cool water to stop them from cooking.

Coat the bottom of the 12×9 baking dish with spaghetti sauce. Take the cheese/spinach mixture and stuff the shells approximately ¾ of the way full. Lay the shells in the baking dish. Take the remaining 1 cup mixture of cheese and sprinkle it on top of the shells.

Cover the dish with aluminum foil and bake in the oven for 45 minutes.

Strawberry Cheesecake

Ingredients

•              2 ½ cups graham cracker crumbs = 30 squares approximately

•              4 tablespoons sugar

•              6 tablespoons margarine or butter; melted

•              4 packages (8 oz. each) plus 2 packages (3 oz. each) cream cheese; softened

•              2 cups sugar

•              4 teaspoons grated lemon peel

•              ¼ teaspoon vanilla

•              6 eggs

•              1 cup strawberry glaze

Heat oven to 350 degrees. Mix cracker crumbs, 4 tablespoons sugar and the margarine. Press in bottom of 9 inch spring form pan. Bake 15 minutes; cool.

Heat oven to 300 degrees. Beat cream cheese in large mixer bowl. Add 2 cups sugar gradually, beating until fluffy. Add lemon peel and vanilla. Beat in 1 egg at a time. Pour over crumb mixture.

Bake until center is firm, about 2 hours. Cool to room temperature. Refrigerate at least 6 hours but no longer than 10 days. Loosen the edge of the cheesecake with knife before removing side of pan. Top with glaze.

-Strawberry Glaze

Arrange 2 cups of fresh strawberries on cheesecake. Heat 1 1/3 cup strawberry jam and 2 teaspoon lemon juice, stirring constantly, until jam is melted and smooth. Remove from heat; let stand 5 minutes. Pour over strawberries just before serving.
