Unleash the Power of the Slow Cooker: Italian Roast


As a working mother of 3 kids, I worship my slow cooker. The nights when I can come home and have dinner ready for me are cherished.  Who doesn’t love walking into a house filled with scrumptious aromas?

If you are looking for a new idea for a week night meal, try this roast recipe in your slow cooker. It could make your next hectic evening a pleasure instead of a hassle.

Italian Roast

1 four to five pound roast of beef

1 T. olive oil

4 to 5 large potatoes cut into quarters (add more for more people)

1 large onion cut in a rough dice

5 to 6 carrots, peeled and cut into four pieces

2 packets dry Italian dressing mix

1 12 ounce can of beer (any kind works)

2 cups water

Sprinkle the roast with ½ of a packet of dry Italian dressing mix. Heat olive oil in a pan over medium high heat. Sear meat on all sides until browned. Layer the onion and carrot in the bottom of the crockpot. Add roast on top. Sprinkle second ½ of packet of dressing over meat. Pile potatoes on top of meat. Evenly spread second packet of dressing mix over potatoes. Pour beer and then water over everything.

This can be cooked on low in your slow cooker for 6 hours or high for 2 hours.

To save time, prepare this recipe ahead of time. Follow the recipe but don’t add the beer and water. You can store the entire slow cooker insert in the fridge with the cover on it. In the morning, pour the beer and water over the meat and vegetables. The cooking times will increase slightly.

When you get home, you will be greeted by amazing aromas; and it tastes even better. Add a loaf of bread or a salad and you have dinner on the table in just minutes.
